Something I really love about dedicating your diet for clean eats is the pairings you discover. Everything is natural and raw, so you find ways to combine flavors throughout your dish. You can focus all your energy on a cohesive dish for dinner, and have tons of fun mixing things together for lunch. This is one of my favorite pairings I have found. In the past I’ve only eaten hard boiled eggs on the savory side, but having it be sort of the middle-man for the avo on toast & yogurt mix is perfect for transitioning your palate from something savory to sweet.
Everyone has their favorite go-to avo on toast and one of mine is this simple baby. Toast your bread slice to your liking (I like using a more grainy or seedy toast and toasting it crunchy). Slice your organic avo and layer it on the toast. Dice up some organic cherry tomatoes & onions and layer those bad boys on. Top with salt & pepper. Bing. Bang. Done.
I use an egg cooker (agh I love inventions for the lazy folk – I use this Elite Cuisine that fits perfectly in my pantry) to hard boiled my eggs for the week and store them in a glass container (Lifefactory for the win!) in the fridge and carry them in a reusable bag for lunch each day (Stashers are amazing!) I will lightly salt them and let them combine with the yogurt & peanut butter mix. It might sound weird but I love it.
For the yogurt mix, I use Siggi’s vanilla or plain. I love the texture of it as I love my yogurt to have a thicker consistency for spreads and smoothies and honestly just the taste is better for me, and Siggi’s is all natural with no hidden gross ingredients and not a lot of sugar. I top it with granola, chia seeds, frozen fruit (usually raspberries or strawberries), and sprinkle some cinnamon and drizzle peanut butter & honey. Uh…YEAH!
Enjoy this delicious simple lunch for days on end. I seriously haven’t gotten sick of it yet.
Avocado on Toast:
your preferred toast
8 cherry tomatoes sliced in half
1/4 c diced onion
salt & pepper to taste
Hard Boiled Egg
siggi’s or your fav vanilla or plain yogurt
1/2 c granola
1/2 c frozen fruit (bananas, cherries, strawberries, raspberries, blueberries, etc.)
1 tbs honey
1 tbs chia seeds
drizzle peanut butter on that goodness and call it a day!
